What we run in Delray Beach

Delray is grease work, plainly. Atlantic Avenue stacks kitchen after kitchen along a short run, and a lot of those buildings are old enough that the interceptor is undersized for what the kitchen became. We pump traps, jet the lines feeding them, and collect used cooking oil on the same stop so a restaurant is not scheduling three vendors around one loading zone. Pineapple Grove and the Swinton Avenue historic blocks are the same story with narrower alleys. Because kitchens sit this close together, one neglected line backs up into a neighbor’s problem fast, so we push preventive intervals here harder than almost anywhere in the county. Excavation work shows up mainly along Federal Highway and on utility repairs behind the avenue.

Getting a truck in

Nothing happens on Atlantic Avenue in daylight. Sidewalk cafes take the sidewalk, valet takes the curb, and foot traffic takes whatever is left, so we work late night and early morning and we are off the street before the sidewalks get set. Alley access behind the avenue is genuinely tight, sometimes one truck wide with a dumpster already in it, which is why we scout an address before the first service rather than discovering it at midnight. The historic blocks have low canopy and older pavement, so we watch overhead and stage where the truck’s weight sits on something solid. Federal Highway is the easy part of this town.

Through the year

Season here is unmistakable. From roughly the new year through spring the avenue runs at capacity, kitchens push volume every night, and traps that made it eight weeks in the off season will not make four. We tighten intervals going into it and loosen them after. Summer is when we do the work nobody has time for in season: line jetting, basin cleaning, fixing the setups that barely held. Storms fill the downtown basins quickly because there is very little pervious ground left on that corridor, so we clear them before the wet months rather than during.

There are plenty of capable vacuum companies and plenty of capable excavation companies. What is rare in Delray Beach is one outfit that does both, off one roster of trucks, under one set of permits. That was a deliberate choice rather than an accident of how the company grew.

A new catch basin is the clearest example. Setting the structure is drainage work, but the hole it goes into sits at the low point of a lot, which is exactly where irrigation, lighting conduit and sleeves tend to run. Somebody has to expose those before a bucket finds them. Those are usually two vendors and two schedules. Here they are one visit.

The same logic runs the other way. A restaurant with a line that keeps blocking has a jetting problem and a trap interval problem, and treating either one alone means doing it again in a few months. Because the crew that clears the line is the crew that services the trap, the conversation covers both instead of stopping at the edge of somebody’s scope.
