Naples is grease work at a level of intensity that surprises people who have not serviced it. Fifth Avenue South and Third Street South pack high-volume kitchens into a short, pretty, tightly managed streetscape where the back of house is small and there is nowhere to put anything. Traps fill faster than their size suggests because the covers are enormous during season. We pump on schedule, jet the lines feeding them, and pull used cooking oil on the same visit so an operator with no storage is not stacking drums by a door. Resort and hospital food service adds steady volume off the avenues. Excavation is lighter here, mostly utility exposure in sandy coastal ground and drainage structures along the Trail.
Getting a truck in
Naples cares how a service truck looks and behaves, and honestly, so do we. Fifth and Third have almost no daytime service access, so we work nights and early mornings, keep the setup tight, wash down, and leave the block the way we found it. Several of these kitchens are reached through a shared rear court that is already half full of somebody else’s dumpster, which means longer hose runs and knowing the address before we arrive rather than after. Season traffic on the Trail is real, and we route around the worst of it. Resort properties want back-of-house approaches and no truck in a guest sightline.

This is the sharpest seasonal swing on our whole map. From January through the spring the kitchens run flat out, and a trap that comfortably held eight weeks in the summer will not hold half that in February. A flat year-round interval is wrong in both directions here, wasteful in the quiet months and inadequate in the busy ones, so we set schedules that actually change with the season. Summer is when the jetting and structure work happens, along with storm preparation. Surge has reshaped parts of the beachfront in recent years, which nobody in this town has forgotten.
