Marco Island is a dredge-and-fill barrier island, and everything we do here starts from that. Most of the developed ground is filled, the canal network runs through all of it, and the water table is high and salty, which makes digging its own problem and makes any spill an immediate one. Our main work is resort and condominium kitchens, marina operations and the island restaurant base, so grease trap service, line jetting and used cooking oil collection carry the load. Condominium kitchens and shared commissary setups are a large slice of that, and they are usually below or behind buildings with very little clearance. Excavation is careful and mostly utility exposure, since a conventional dig in salty fill near a canal is asking for trouble.
Getting a truck in
There are two bridges on and off this island and that is the whole conversation. A loaded tanker’s window is set by them, so we plan the trip out before we start the job, not after the tank is full. On the island itself, condominium and resort service areas are cramped, with garage clearances a tanker will not fit under, so we stage in a lot and run hose the rest of the way. Canal-front setups get done on solid ground with containment in place, never on a soft edge. Collier Boulevard and San Marco Road are the only real routes, and in season they are slow, which pushes us early.
Through the year
The island roughly doubles in the winter and then goes genuinely quiet in the summer, and no other city we serve swings quite this hard. Resort and restaurant kitchens go from full to nearly closed, so service intervals that ignore the calendar are wrong half the year. We tighten hard for the winter run and stretch through the off months, and we use the quiet stretch for jetting and structure work that is impossible to schedule in February. Storm season on a low barrier island is taken seriously, and preparation work lands well before it arrives.
